Progressive industrialization, urbanization, and global population growth have caused colossal changes in natural environments and have led to numerous changes in our surroundings. Among the numerous threats to the environment and public health, chemical contamination, both caused by industry and by those we ourselves produce through sometimes unwise behavior, is at the forefront. These chemicals, which pose a threat to the environment and public health, are referred to as "environmental poisons", and the greatest threat currently posed by pesticides, mycotoxins, and nitrosamines. These compounds threaten not only the biological productivity of arable soils, the quality of surface waters (rivers, lakes, seas), agricultural crops, food, etc., but also the health of humans and farm animals.
